This delicious Mexican inspired dish is just fabulous for alfresco dining and perfect for four adults. The juicy rib eye is complemented perfectly by the potato wedges and vibrant salsa.

  • 1kg (2 1/2 lb) Desiree potatoes, cut into wedges
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun spice
  • 4 (200g) rib eye steaks
  • 4 teaspoons chipotle sauce
  • 200g (7 oz) tinned sweetcorn with low sugar
  • 150g (5 oz) cherry tomatoes, quartered
  • 1 medium ripe avocado, roughly chopped
  • 1/2 red onion, sliced
  • 2 tablespoons chopped fresh coriander
  • 1 chilli, deseeded and finely chopped
  • zest and juice of 1 lime
  • salt and pepper, to taste
  • 4 tablespoons soured cream

  1. Preheat the oven to 200 C / 180 C fan / Gas 6. Toss the potatoes with the oil and Cajun spice mix until well coated. Arrange in a roasting tin.
  2. Roast for 30 minutes, turning once, until golden and crispy.
  3. Rub each steak with the chipotle paste and set aside to marinate.
  4. In a large bowl mix the sweetcorn, cherry tomatoes, avocado, onion, coriander, chilli, lime zest and juice. Season to taste.
  5. Set a griddle pan over a medium to high heat and cook the steaks for 2 to 2 1/2 minutes on each side for a medium-rare steak. Add another minute for a medium to well-done steak. Loosely cover the steaks with foil and leave to rest for 5 minutes while you finish the sauce.
  6. Divide the wedges and steaks between 4 plates and serve with the Mexican salsa and a tablespoon of soured cream on the side.

Tip

For a perfectly grilled steak, let the meat sit at room temperature for 20 to 30 minutes before cooking.

How To Make Chipotle Rubbed Sirloin Steak Tacos Mexican Style

1. Remove your steak out of the packaging, pat dry and brush all over with the Chipotle in Adobo. Cover and leave to marinate for up to 2 hours.

2. Season the steak with sea salt just prior to cooking.

3. Prepare a BBQ for direct grilling over high heat or a heavy-based griddle pan until it sizzles when you add a drop of oil.

4. Sear the steak in beef dripping on both sides over high heat creating a rich, dark crust, then reduce to medium heat and continue to cook for 2 to 3 minutes each side for a medium-rare steak. Press the steak with your thumb and it should have a slight spring to touch and a core temperature of 50°C before resting.

5. Leave to rest in a warm place for 5 minutes before carving into thin slices across the grain.


Recipe Summary

  • 1 cup Holland House® Sherry Cooking Wine
  • 1 cup tomato puree or crushed tomatoes
  • 3 canned chipotle chiles in adobo sauce, or more if desired
  • 4 large garlic cloves
  • ½ small yellow onion
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil or olive oil
  • 2 teaspoons ground cumin
  • ½ teaspoon salt
  • 1 (2 pound) skirt steak or flank steak

In a blender container, combine sherry cooking wine and remaining ingredients except meat. Cover and run on high until smooth.

Trim steak of any visible fat. Place steak in a non-metallic baking dish or sealable plastic bag. Add marinade turn meat to coat. Cover and refrigerate at least 8 hours or overnight, turning meat one or more times while marinating.

Preheat grill to medium-high heat. Drain meat and discard marinade. Grill skirt steak about 6 minutes over direct heat with cover closed. Turn meat grill with cover closed 2 minutes more or until cooked as desired. Flank steak will take longer to cook.

Slice steak into thin strips across the grain. Serve with warm corn tortillas, if desired.


Chipotle Salsa (Hot Salsa)

I absolutely love a good salsa. I'm more of a spicy hot salsa kinda girl and lately I have been loving this chipotle salsa recipe. It's the one I made with some leftover chipotle pepper and since then fell in love with hot kick of this salsa.

I find this salsa great for entertaining, really a perfect crowd-pleaser. Anyone who loves spicy-smokey dips and chips falls in LOVE with it. From my past experience, I can already tell you.. You will get SO many requests for recipe and will see empty bowl very quickly. :) Be Ready!

Oh, and good news! It is a blender salsa! No need to chop a thing! Just grab a blender and welcome guests with scrumptious bowl of Spicyyy Salsa and Chips!

Oh, and this salsa is very close to Chipotle Mexican Grill's Red Salsa recipe! Honestly, I should say, it is even better and fresh tasting than Chipotle's Red salsa. For this reason, I decided to not call it a Copycat.

To prepare my Chipotle Salsa, all you need is simple pantry ingredients and a blender. Ready in just 15-20 minutes.. This salsa will be your favorite hot salsa ever! Better than Chipotle's, Guaranteed!

Whenever I have a can of chipotle or batch of chipotle pepper at home.. I make the most of it. Add it to marinades, stews, salsa, and even into Burrito Sauce. This reminds me.. This week's recipes also have a disguised theme - How to make most of Chipotle Pepper. (hint hint) :)

First step in making this salsa is - roasting the jalapeno and garlic.

Even though it is a Chipotle Salsa, I wanted to enhance the hot smokey taste with fresh roasted and smokey flavors. I highly recommend roasting a jalapeno and charring some garlic for this recipe.

Once jalapeno and garlic are ready, next step is 5 minutes. Grab a good quality blender, add all ingredients and blend until salsa is ready. I like to keep it a little chunky for some bite.. but even a more purred version like restaurant's taste scrumptious!

As they say, "there is always room for one more salsa!" Include this in your Party-Menu and it's flavors will be highly in demand. It will not be just one-more-salsa but "The Salsa and Chips" of the evening!

Chipotle Salsa Steak

If you enjoy the bold and spicy flavor of chipotle peppers, this recipe is for you! Steak is marinated in chipotle salsa then thrown on the grill.

Ingredients

  • 1 beef Top Round Steak, cut 3/4 to 1 inch thick (1 pound)
  • 1-1/2 cups prepared chipotle salsa
  • 2 medium limes, peel grated, juiced
  • 1/2 teaspoon ground cumin
  • 3 tablespoons chopped fresh cilantro leaves
  • Flour tortillas, warmed (optional)
  • Chopped fresh cilantro (optional)

Instructions

Combine salsa, lime peel and juice, and cumin in small bowl. Place beef Steak in food-safe plastic bag. Pour 3/4 cup salsa marinade over steak turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or overnight. Cover and reserve remaining marinade in refrigerator for sauce.

Remove steak from marinade discard marinade. Place steak on grid over medium, ash-covered coals. Grill 3/4-inch thick steak, covered, 10 to 11 minutes (over medium heat on preheated gas grill, times remain the same) for medium rare (145°F) doneness, turning occasionally. (Do not overcook). Place 1-inch steak on grid over medium, ash-covered coals. Grill, covered, 12 to 14 minutes (over medium heat on preheated gas grill, 16 to 19 minutes) for medium rare (145°F) doneness, turning occasionally. (Do not overcook.)

Meanwhile stir 3 tablespoons cilantro into reserved marinade. Carve steak into thin slices. Serve with sauce and tortillas, if desired. Garnish with cilantro, if desired.

Sheet Pan Chipotle Steak Fajitas are for those busy weeknights when you want a flavorful and easy meal to impress! Full of flavor, and just the right amount of kick. This simple meal comes together in less than 30 minutes and is best served with the best homemade salsa you’ll ever eat!

With a sheet pan in hand, it’s always easy for me to come up with an easy dinner plan!! After our recent trip to Mexico, all I really think about is when my next Mexican dinner will happen……. It didn’t take long for this recipe to develop.

Within the first few days of returning, my little fam was craving all the Mexican. And I mean, a delicious marinade, steak, and guacamole to be exact. Or maybe it was exactly what I was craving?

This deliciously flavored chipotle & cilantro marinade makes the most incredibly flavorful flank steak! I wasn’t sure I was going the fajita route, but I knew that I needed a one pan a super simple dinner. And I was CRAVING flank steak like nobody’s business.

Insert the sheet pan. I love that this recipe comes together in less than 30 minutes, and is complete with veggies. The flank steak works insanely well on a sheet pan, and cooks to absolute perfection!

I love that I could whip up this marinade the night before, and then toss all on a sheet pan with little work to get dinner on the table. Because we’re currently in the middle of baseball season, this mama needs the easiest meals possible! We are gone just about every night of the week, and with a simple recipe that is prepped and ready to go, it’s a no brainer.
