We also take care of the peppers, which we wash, remove the stalks, seeds and internal ribs and let them drain as well.

In a bowl, mix the flavored meat with onion, carrot, rice, egg yolks, semolina and tomato juice, until completely homogenous. With this composition we fill the peppers, and from the tomatoes we cut slices and put the caps of the peppers. With a little oil, grease the pan in which the peppers will be placed, cover with hot water and add tomato juice, if you want color in the cooking pot. Put the pot of peppers on low heat and let it boil well (I leave them for a few hours, on the smallest eye, with the smallest flame ... I have patience with the girls)

If we want, we can make a sauce from a few tablespoons of pepper juice and a tablespoon of flour, but this involves removing the peppers from the pan, making the sauce and putting the peppers back in the sauce, in which they will boil for a few more minutes. to penetrate that pepper sauce.

ALTERNATIVE: They can be served as such, only with sour cream and red and fresh bread.
